I want to know the UAC and UAS behavior during NAT

1. How to know SIP NAT or UAC behind NAT from wireshark logs
2. What are the parameter that need to set at UAC to overcome NAT

There's several possible indicators, such as the use of private IP
addresses (RFC1918) in the Contact: header for example.

2. What are the parameter that need to set at UAC to overcome NAT
There are many ways to overcome NAT. Some methods more effective than
others. Using "ICE" (RFC5245) tends to be the most effective for media,
which is sort of a mix of STUN/TURN listing "candidate" IP addresses in the
SDP and probing them. Sadly it's not widely deployed by UAs.

SBCs tend to be clever and adjust to RTP coming from a different address
than the one advertised in the SDP and send RTP there instead, which works
for the common case of symmetric RTP.

SIP responses are usually fine with the use of rport (RFC 3581)
